Deep ruby, made only in the best years from a 90 percent Merlot blend at 15 percent alcohol. Concentrated plum and tobacco with firm tannins that the estate says give it its longevity.

What it pairs with

  • Game
Ferdinand names game; the tobacco and earth notes meet the meat.
  • Red meat in any form
The producer's own recommendation; three to four weeks on the skins leave the tannin for it.
  • Mature cheese
The producer names ripe cheese; salt softens the firm tannin.
