The estate's Grand Cru Rebula from the Medana Jama plot. Marjan Simcic bases the Opoka line on ten metre soil surveys of each site; the wine is vertical, saline and built to age.

What it pairs with

  • Lobster with butter
Weight and salinity hold up to the richest shellfish.
  • Truffle risotto
The nutty, saline register meets the truffle without fighting it.
  • Aged Parmigiano
Acidity and mineral drive cut through crystalline hard cheese.
