Palate: hazelnut, citrus, minerals

Yellow and crystalline after years of ageing, with a persistent creamy mousse from very fine bubbles. The house's long aged cuvee: mature, piquant and complex, extra brut so the sugar never masks the acidity.

    The nut and cocoa register meets a crystalline cheese and the acidity clears the fat.
  • Lobster with butter
    Four years and more on the lees give the weight for rich shellfish.
  • Roast guinea fowl
    Extra brut dosage keeps the palate clean against browned white meat.
