Aroma: ripe apple, mango, pineapple, bergamot, tea tree, thyme

Palate: bread crust, butter, vanilla, toast, citrus, tropical fruit

Crystalline golden yellow with a fine persistent bead. Ripe apple, mango and bergamot over bread crust and butter, completely dry, with a mineral signature running under the fruit.

What it pairs with

  • Fish carpaccio
Movia names this pairing; the bubbles and acidity lift the raw fish.
  • Seafood pasta
Toast and butter notes sit with shellfish while the acidity cuts the oil.
  • Salmon tartare with an Asian accent
The tea tree and thyme register meets the aromatics in the dish.
