Aroma: raspberry, redcurrant, blood orange, rosehip

Palate: shortcrust pastry, vanilla, almond, butter, bread crust, Mediterranean herbs

Pale pink with a copper cast and a fine persistent bead. Red berries and blood orange over pastry and almond, completely dry, closing on wild strawberry.

What it pairs with

  • Salmon tartare
Movia names this pairing; the red fruit meets the fish without overwhelming it.
  • Chickpea hummus
Acidity and bubbles cut the tahini richness.
  • Ceviche, sashimi and nigiri
The dry finish and citrus lift keep raw fish clean on the palate.
