Aroma: cooked apple, quince, apricot, ripe pear, dried meadow flowers

Palate: candied citrus, hay, nutmeg, white pepper, honey, lemon balm, thyme

Clear amber with a dense texture. Eight months on the skins give cooked apple, quince and candied citrus over a herbal close, with a light tannic grip holding the freshness in place.

What it pairs with

  • Lamb crown roast in a herb crust
The wine's thyme and lemon balm close matches the herb crust and its tannin handles the fat.
  • Pork knuckle or ribs
Skin contact tannin scrubs the richness while the honeyed fruit answers the roast.
  • Angus sirloin with miso and lightly cooked vegetables
Movia names this pairing; the wine's savoury, nutty register meets the miso umami.
