Aroma: lemon zest, wild fennel, volcanic mineral, white peach

Palate: citrus, green olive, saline, herbal finish

MunJebel Bianco from Cornelissen shows the volcanic-herbal dimension of Etna whites when made without additions: textured, complex and with a distinctively wild herbal-mineral character from the blend of Carricante, Catarratto and ancient Minella.

What it pairs with

  • Spaghetti alle vongole (no cream)
Saline mineral and wild herb notes bridge the briny clams perfectly.
  • Zucchini blossoms stuffed with ricotta
The herbal and mineral character of the wine pairs beautifully with the delicate floral stuffed vegetable.
  • Raw sea bass carpaccio with Sicilian olive oil
Clean mineral finish and herbal notes elevate the delicate fish.

History

MunJebel Bianco was introduced to complement the red range, blending Carricante, Catarratto and the rare ancient Minella variety recovered from field blends on the north slope. The wine is made without any additions, showcasing Etna's white grapes in their most natural form.
