What it pairs with
-
Spaghetti con vongole e prezzemolo
Saline-mineral character and citrus acidity mirror the briny clam sweetness. -
Bruschetta with olive oil and sea salt
Refreshing mineral acidity complements the simplicity of the oil-dressed bruschetta. -
Grilled sea bream fillet
Clean mineral finish and bright acidity pair naturally with the delicate white fish.
History
Firriato added an Etna Bianco to the Cavanera range in 2013 to complete the resort's wine programme, drawing on Carricante and Catarratto from the Verzella contrada. The wine is produced for both the resort restaurant and retail, providing an accessible introduction to Etna whites.
