From the Milo contrada entitled to the Etna Bianco Superiore designation, 'A Puddara (Sicilian for 'la pullera', hen with chicks) is Fessina's single-vineyard Carricante of pure mineral tension and volcanic chalk finesse.

What it pairs with

  • Grilled scallops with Sicilian capers
The wine's chalk-mineral purity and saline finish pair elegantly with sweet scallops and briny capers.
  • Raw Sicilian red prawns with sea salt
Saline mineral and citrus brightness frame the oceanic sweetness of fresh raw prawns.
  • Spaghetti alle vongole
Classic Sicilian pairing: mineral-saline character bridges the bivalve sweetness.

History

'A Puddara comes from a small parcel of Carricante vines in the Milo area on Etna's east slope, entitled to the more prestigious Etna Bianco Superiore DOC designation. The wine was introduced as Fessina sought to produce a benchmark single-contrada white alongside the primary range.
