What it pairs with

  • Slow-cooked pork with fennel
Skin contact gives the grip that a fatty white meat needs.
  • Moroccan spiced vegetables
An orange wine handles the spices that defeat most whites.
  • Aged goat cheese
Three months on skins leave a tannic edge that suits a firm goat cheese.

History

One of the Bierzo's rare skin-contact whites. Godello from forty year old vines cropped at 6,000 kg per hectare ferments and macerates with its skins in open French oak barrels for three months, then ages a further six months in barrel. Around 500 bottles are produced.
