What it pairs with

  • Roast rack of lamb
Sixty year old vines at 700 metres and a year in oak give the structure for a roast.
  • Venison casserole
Fermentation in wooden vats leaves a savoury edge that meets game.
  • Hard cheese with walnuts
    A twelve-month élevage on lees suits a long-matured cheese.

History

Velvet is the estate's small-volume flagship, from sixty year old vines on slopes at 700 metres cropped at 5,000 kg per hectare. It cold macerates twenty-four hours, ferments eighteen days in wooden vats and then spends twelve months on lees in French oak. Around 1,500 bottles are made.
