Aroma: walnut oil, brioche, tea, apple compote, sesame, eucalyptus

Palate: citrus, minerals, cream

Deep yellow and glossy with a fine creamy mousse. With almost no dosage the acidity is exposed, Chardonnay giving body and Pinot Noir a velvet grip; the house calls it a stylistic speciality that sits close to a still wine.

    Near zero dosage and high acidity meet the brine exactly.

    Nothing in the wine is sweet enough to fight raw fish.

    Three years and more on the lees give the depth for a salty cheese.
