Full-bodiedHigh acidityDryLong finish

Aroma: candied orange, rhubarb, quince, cocoa, butter brioche, hazelnut

Palate: orange, cream, red fruit

Dense colour with copper nuances from ripe Pinot Noir. Long lees ageing adds the meaty note the variety gives, and a faint tannic frame that the house links to its longevity.

What it pairs with

  • Duck breast
The wine has enough grip and body to sit with a red fleshed bird.
  • Mushroom dishes
The savoury, meaty register meets the earthiness directly.
  • Aged cheese
The faint tannic frame holds up where a lighter sparkling would fold.
