In the glass

Full-bodiedHigh acidityDryLong finish

Aroma: ripe melon, butter biscuit, chamomile, lavender, honey, acacia, dark chocolate

Palate: melon, citrus, minerals

Golden with the depth Chardonnay gives, and a very persistent mousse. Varietal character dominates, and the long finish closes on minerality rather than fruit.

What it pairs with

  • Scallops
The melon and honey register meets the natural sweetness of the shellfish.
  • Butter poached white fish
Full body and biscuit notes carry the butter.
  • Soft washed rind cheese
Extra brut dosage and acidity clear the fat.
