In the glass

Medium-bodiedHigh acidityDryLong finish

Aroma: lemon, apple, lemongrass, apple compote

Palate: Mediterranean herbs, yeast, green apple

Pale yellow with the faintest orange cast and an abundant, persistent mousse. The house calls this its direct, decisive bottle: brut at the low end of the band, so the ripe apple acidity stays in front.

What it pairs with

  • Aperitif on its own
Bjana positions the Brut as an opening wine; the cut of the acidity works without food.
  • Fried anchovies
Bubbles and low dosage scrub fried food from the palate.
  • Brda prosciutto
Acidity cuts the cure and the herbal note answers the salt.
