History

Vilof draws on several selected sites among the family holdings. Seventy per cent comes from the Cobos vineyard in the El Foco paraje, clay soil with a south aspect that ripens easily and gives warmth and structure; the remainder comes from higher parcels of clay with rolled stones that add freshness and acid balance. Each parcel is fermented separately on its own Mencía yeasts and aged apart before assembly.
