Four Trousseau types interplanted with 5 percent Poulsard and Enfarine on black Rhaetian sandstone and marl, cropped at around 28 hl per hectare. Pignier describes a fruity, spicy, silky and deep red whose perfume recalls autumn and the Jura forest.

What it pairs with

  • Game birds
The autumnal, forest-floor register the domaine describes is a game match.
  • Jura charcuterie
Trousseau's acidity and moderate tannin are the regional answer to cured pork.
  • Mushroom dishes
The wine's forest aromatics meet fungal savour directly.
