In the glass
Aroma: white flowers
Chardonnay from a massal selection of Melon a queue rouge, grown on blackish blue fossil-rich marl in the Val de Valliere reculee. The cask is kept topped up throughout so the floral character of the grape stays forward rather than developing veil aromas. The domaine calls it a floral wine.
What it pairs with
-
Freshwater fish
A topped-up Chardonnay with lees texture but no oxidative weight suits river fish. -
Goat cheese
The floral register and acidity cut fresh cheese cleanly. -
Roast chicken
Lees stirring gives the fat the domaine describes, enough for white meat.
