Bourdy's Cotes du Jura Savagnin given the same seven to eight year veil ageing as the domaine's Chateau-Chalon: bright golden yellow, powerful, walnut-dominant and long. Sulphites under 20 mg per litre.

What it pairs with

  • Comte and Morbier
Veil-aged Savagnin and Jura mountain cheese is the regional constant.
  • Poultry in cream sauce
The oxidative walnut register meets cream without being lost in it.
  • Mushroom tart
Savoury fungal depth mirrors what the veil gives the wine.
