A semi-hard cow's milk cheese from Jura plateaus: Doubs, almost all of Jura, and a few communes of Ain and Saône-et-Loire.
An uncooked pressed cow's milk cheese cut across the middle by a thin horizontal line of vegetable charcoal. INAO says the farmer once made a small cheese from the evening milk, coated it with cauldron soot overnight and topped it with the morning cheese; French Wikipedia puts the first written traces in the late 18th century. A wheel is 35 cm across and 7 cm high (INAO) and weighs about 7 kg (French Wikipedia; Le Guide du Fromage gives 5 to 8 kg).

Creamy and melting, with lactic, caramel, vanilla and fruit notes that turn roasted, spiced and vegetal with age (INAO). The natural rind is beige to orange, and the ivory paste carries a few scattered small openings.

Poulsard is the palest and lightest of the Jura reds, low in tannin and bright in red fruit. Morbier is creamy and melting with a caramel edge, and the wine's freshness lifts the paste with no tannin to turn bitter against the rind.
Morbier is creamy and melting, with caramel and fruit notes. Trousseau is the deepest of the Jura reds yet supple in tannin, and its spice and ripe fruit sit with the paste without turning bitter against the rind or the charcoal line.
