Aroma: wild berry

Trousseau destemmed and given a year in foudre. Clavelin calls the robe bright limpid garnet, the nose intense, fruity and wild, and the palate leather and spice, balanced and round, with blackcurrant, sloe and redcurrant on the finish.

What it pairs with

  • Charcuterie starters
The domaine's own first pairing for this wine.
  • Game in sauce
Clavelin names gibier en sauce; the leather and spice register carries it.
  • Poultry
Listed on the producer's serving card at 14 to 16 degrees.
  • Cheese board
Named by the domaine; the acidity resets the palate between cheeses.
