What it pairs with

  • Grouse rôtie
Mineral Gamay with firm structure matches the gamey intensity of roasted grouse.
  • Perdrix aux choux
Earthy cabbage-and-partridge is a natural pairing for the wine's granite mineral notes.
  • Livarot
Punchy washed-rind Livarot finds structure in the wine's firm tannin.

History

La Pas de la Mule ('the mule's step') is Cheysson's top single-parcel Chiroubles, named after the old donkey path that traverses the steepest section of the domaine's highest vineyard. The wine is made only in exceptional vintages.
