Col Vetoraz is uniquely positioned above Santo Stefano at the edge of the Cartizze hill, giving its Cartizze expression exceptional altitude and south-facing exposure. The result is an opulent, aromatic Cartizze with great aromatic intensity and length.

What it pairs with

  • Millefoglie pastry with custard
Creamy custard and the wine's honey-cream texture are mutually enhancing.
  • Sauteed scallops with vanilla butter
Floral and off-dry character harmonises with vanilla-scented shellfish.
  • Peach gelato
Stone-fruit in both the wine and gelato create a seamless pairing.

History

Col Vetoraz was founded in 1993 specifically to produce Cartizze and premium Prosecco Superiore from the hillsides above Santo Stefano. The winery sits at higher elevation than most Valdobbiadene estates, exploiting the cooler microclimate for aromatic complexity.
