How is the Trebbiano vinified?

Destemmed grapes go into amphora for a 24 hour maceration, are soft-pressed the next day and the must ferments spontaneously.

How long is the amphora ageing?

Eighteen months in buried terracotta, where the estate says slow constant micro-oxygenation makes the palate softer and the aromas more complex.

When is it bottled?

Two years after the harvest, from vineyards farmed organically and biodynamically at Atri.
