A project begun with the 2017 harvest, vinifying Trebbiano in jars of cocciopesto, the Roman mix of crushed brick, stone fragments, sand and binder. The estate says its microporosity lets the wine breathe without adding any flavour, giving a fine, delicate and markedly mineral white.

What is cocciopesto?

A Roman building material made from crushed brick, stone fragments, sand, binder and water, air-dried for at least 30 days. Nicodemi has jars made from it and vinifies Trebbiano inside them.

How does it differ from terracotta?

The estate stresses that cocciopesto is not terracotta. Its microporosity allows micro-oxygenation that lifts aroma and structure without releasing any flavour of its own.
