A Valpolicella Superiore from fresh grapes at 450 metres, whose wide day-night temperature swing gives a particular spiciness on the nose and, the estate says, an entirely distinctive polyphenolic profile, with acidity marking a serious structure.

What it pairs with

  • Beef carpaccio
No appassimento leaves the wine fresh enough for raw beef.
  • Roast chicken with lemon
The high acidity handles citrus where a heavier red would not.
  • Mushroom risotto
The altitude-driven spice register meets earthy fungi.
