Cavolo is a two hectare east-facing vineyard at 130 metres at Grezzana, planted between 1996 and 1999. The estate says the morning sun and the shelter of the mountain above let the vines dry quickly on damp mornings and ripen without heat stress, which is what makes the wine broad and round.
The estate reports a garnet red, with red plum and small red fruits on the nose accompanied by withered violets, light mineral notes and balsamic spices. The palate is elegant, round and slender, with a red-fruit weave supported by a lively acidity and a long finish carrying a pleasant bittersweet note and a saline nuance.
The estate says the eastern exposure gives the vines morning sun and keeps them protected from the afternoon heat by the mountain above, so they dry quickly on damp mornings and ripen without thermal stress, producing a broad, round and balanced Amarone.
