Aroma: white flowers, fresh black cherry, cinnamon, nutmeg, pepper

Palate: soft tannin, clean red fruit

Medium ruby and lively when young, with a fragrant nose of delicate flowers, fresh black cherry and warm spice, then a medium-bodied, sapid and well-balanced palate with soft tannin and good acidity.

What it pairs with

  • Vegetable minestrone
The estate lists soups, where the wine's low tannin does not clash with vegetables.
  • Pasta e fagioli
Novaia recommends pasta; the acidity lifts a starchy Veneto bowl.
  • Roast chicken with sage
White meat is the producer's own suggestion for this bottling.

History

Novaia's base Valpolicella comes from the Vaona family's certified organic hillside vineyards between 250 and 400 metres in Marano di Valpolicella, fermented with indigenous yeasts and kept in steel to preserve the fruit.
