Aroma: red and forest fruits, violet, rose, aromatic herbs, mineral thread

Palate: velvet texture, citrus lift, saline close, liquorice

Intense ruby, with red and forest fruits, floral violet and rose, hints of aromatic herbs and a fine mineral thread, then enveloping and velvety but held up by live freshness, closing long on citrus and saline echoes that turn towards liquorice and earth with age.

What it pairs with

  • Roast hare
The herbal and mineral register meets long-cooked game.
  • Beef in barolo-style braise
The live freshness stops a slow braise from turning heavy.
  • Extra-aged Parmigiano
The saline close is sharpened by crystalline cheese salt.

History

The Case Vecie vineyard sits at 450 metres on the Torricelle above Verona, between pasture and woodland inside the Borago-Galina protected conservation area. The estate reports the site runs about four degrees cooler than the traditional Valpolicella and is picked around three weeks later, which is what gives the wine its balsamic signature.
