About Allgäuer Bergkäse

A raw-milk, rind-ripened round cheese, protected as a g.U. (PDO) since 24 January 1997. The EU summary sheet asks for wheels of 15 to 50 kg at production, pea-sized eyes from scattered to sparse, at least the full-fat grade (45 to 49 percent fat in dry matter) and four months' ripening, and traces the cheese to Swiss herdsmen hired into the Allgäu around 1820. The area takes in the Bodenseekreis on Baden's Bodensee shore, though the cheese is mainly an Allgäu one. In Freiburg the Münstermarkt stall Alles Käs' says Allgäuer Bergkäse from the Sellthüren dairy, young and aged, has been sold on the market for over 30 years.

Made in: Districts of Lindau (Bodensee), Oberallgäu, Ostallgäu, Unterallgäu, Ravensburg and Bodenseekreis, plus the cities of Kaufbeuren, Kempten and Memmingen

On the plate

Mild and aromatic with a nutty character that grows stronger with age, as German Wikipedia describes it; the paste is darker than Emmentaler's and the holes are smaller.

What to pour with Allgäuer Bergkäse

Traditional-method Sekt, dry Baden

Our pick

A mild, nutty Bergkäse ripened for at least four months coats the mouth. A dry, bottle-fermented Baden Sekt, light to medium in body with high acidity and bubbles, cleans the palate between bites.

Spätburgunder (Pinot Noir), medium-bodied Baden

Our pick

The German Wine Institute says fuller Spätburgunders go with a cheese board. A medium-bodied Baden Pinot Noir with soft to moderate tannin and fresh acidity sits well with this raw-milk cheese, ripened at least four months, mild and nutty.

Spätburgunder Grosses Gewächs and other firm, top-tier cuvées Baden

Our pick

Baden's top Spätburgunder, Grosses Gewächs and its peers, has firm tannin and real depth. Choose an older Bergkäse, whose nutty character grows stronger with age: its salt and fat soften the tannin, and its depth stands up to the wine where a young, mild wheel would fade.

Weißburgunder (Pinot Blanc) Baden

Our pick

The German Wine Institute gives Weißburgunder a subtly nutty aroma and refreshing acidity, and calls Baden a stronghold of the grape. Those nutty notes meet a mild, nutty Bergkäse, and the acidity cuts through its fat.

Lemberger (Blaufränkisch), dry Baden

Our pick

Dry Lemberger is a medium to full red with moderate acidity and medium to firm tannin. A Bergkäse ripened at least four months, mild and nutty, has the fat to soften that tannin, and an older, stronger wheel matches the barrel-aged bottles.
