History

The fruit comes from the El Rapolao paraje in the southeast of Valtuille de Abajo, a west-facing plot on clay with rolled stones, from vines about ninety-five years old cropped at around 2 kg per plant. Half the crop ferments in barrel with stems and half destemmed in steel; the two are then united in 225 litre barrels for malolactic and around eight months of ageing.
