What it pairs with

  • Roast venison haunch
A site the estate keeps for its ageing wines has the depth for dark game.
  • Beef in Bierzo wine
Sandy soils give a deep wine that stands beside its own braise.
  • Truffled potato gratin
The site's depth suits the earthiness of truffle.

History

Villegas is the site where the Demencia project began. The soil has a loamy texture with a significant proportion of sand, unusual in the Bierzo, and the vines sit at about 510 metres facing northeast, catching early sun and partly sheltered from the afternoon heat. Harvests are regular and the wines deep, which is why the estate vinifies the site apart every year for wines built to age.
