How is Rosa-ae made?
Three ways at once: part bled off the reds after cold pre-maceration, part from very light direct pressing of whole bunches, and part from cold maceration on the skins, all fermented at 15 to 16 degrees.
What does it taste like?
Brilliant cherry red with violet tints when young, fresh and persistent strawberry, pomegranate and cherry with a light citrus note typical of the zone, and clear rose florals over good volume.
Why is it the first wine of the vintage?
The estate treats the Cerasuolo as its first reading of the Cordisco each year, the earliest indicator of how the vintage is shaping up.
