Monte Veronese Our pick D'allevo has a harder rind and a savoury, slightly peppery paste. A Ripasso, refermented on the dried-grape pomace left from Amarone, is dry with more body than a young Valpolicella and less weight than Amarone, enough to meet that savoury bite.

History

Speri applies the ripasso technique more restrictively than the production rules require, passing the Valpolicella Classico over the Amarone skins once only, in early March. The estate presents the result as a genuine territory wine rather than a heavier commercial style.
