Aroma: delicate flowers, fresh black cherry, cinnamon, nutmeg

Palate: soft tannin, saline lift

Novaia's no-added-sulphite Valpolicella, made with indigenous yeasts and about two months of post-fermentation maceration, staying medium-bodied, sapid and fresh.

What it pairs with

  • Charcuterie and pickles
A wine made without added sulphites suits the salt and vinegar of a cold plate.
  • Pasta with courgette and mint
The estate lists pasta and risotto; the herbal lift matches a light sauce.
  • Fresh goat cheese
Novaia suggests fresh cheeses, which need acidity rather than structure.

History

Fapulito is Novaia's experiment in making the estate's Valpolicella with no sulphites added at any point in production, fermented on indigenous yeasts in oak truncated-cone vats and then macerated for roughly two months before a short stay in steel.
