Novaia's no-added-sulphite Valpolicella, made with indigenous yeasts and about two months of post-fermentation maceration, staying medium-bodied, sapid and fresh.
Fapulito is Novaia's experiment in making the estate's Valpolicella with no sulphites added at any point in production, fermented on indigenous yeasts in oak truncated-cone vats and then macerated for roughly two months before a short stay in steel.
The estate states there is no use of sulphites throughout the production process. Small amounts occur naturally in any fermented wine, but none are added.
Medium ruby red, with a fragrant nose of delicate flowery and slightly fruity fresh black cherry scents alongside cinnamon, nutmeg and pepper, then a medium-bodied, sapid and fresh palate with soft tannins and good acidity.
Drink it young, within about three years. The estate makes the point that the wine is meant to show the fragrance and integrity of the fruit.
