History

I Cantoni is the 1.5 hectare cru at Novaia, at 400 metres on volcanic soil interspersed with limestone, planted to Guyot at 5000 vines per hectare with an average vine age of about twenty years. The grapes are lightly dried for about thirty days before fermentation with indigenous yeasts.
