A pre-dried Superiore built on sour cherry and blackberry conserve, plum and withered violet, following through into caramel, white pepper, cocoa, walnut and vanilla from two years in French tonneaux.

What it pairs with

  • Roast beef
The estate lists roast meats first for this bottling.
  • Furred and feathered game
Le Ragose names game specifically; the cocoa and walnut register holds up.
  • Aged cheese
The producer recommends mature cheeses against the wine's concentration.

History

Marta Galli was the co-founder of Le Ragose with her husband Arnaldo Galli, and the estate named its French-oak Superiore for her. The grapes are pre-dried for twenty to thirty days, which the estate says gives the wine structure, concentration and alcohol that separate it from a traditional Valpolicella.
