What it pairs with

  • Roast guinea fowl
The wine's softness suits poultry better than a heavy braise.
  • Veal cheeks
Delicate structure and freshness carry a gentle braise.
  • Soft washed-rind cheese
Restrained spice sits against a creamy rind.

History

Nemesio honours the estate's founder, who began recovering abandoned Bierzo vineyards in the late 1980s. The wine uses only grapes from the highest part of Viña San Salvador in the Barreiriñas paraje, a micro-parcel of 0.4 hectares on clay at up to 700 metres, and runs to about 900 bottles a vintage.
