Aroma: mixed spice, ripe cherry, sour cherry, marasca, creme de cassis, toasted walnut, chocolate

Palate: light coffee roast, sweet red fruit, fine tannin

Deep violet in the glass, a generous bouquet of varied spice, ripe cherry, marasca and creme de cassis over toasted walnut, floral notes and chocolate, with a soft sweet entry, real freshness and a very fine tannin that will hold it for years.

What it pairs with

  • Pandoro with mascarpone cream
Verona's Christmas cake is the local match for Recioto and the wine's sweetness sits just above it.
  • Sbrisolona almond tart
Toasted walnut and chocolate in the wine echo the crumbly almond base.
  • Gorgonzola piccante
Sweet wine against blue-cheese salt is the standard contrast pairing.

History

Recioto is the sweet dried-grape red of the Valpolicella, the ancestor from which Amarone was derived when a cask was allowed to ferment out. Viviani makes it from selected bunches dried at Mazzano and releases it after long cellar time.

Frequently asked about Viviani Recioto della Valpolicella Classico

What does Viviani Recioto della Valpolicella Classico taste like?

Deep violet in colour, with a bouquet the estate calls captivating but gentle: varied spice, ripe red fruit including cherry, sour cherry and marasca, creme de cassis, a toasted background of walnuts, floral notes, shades of chocolate and a light coffee roast. The mouth is soft and sweet on entry, compact, fresh and balanced, with a very fine tannin.

Is Recioto della Valpolicella sweet?

Yes. Recioto is fermented only partly, so sugar from the dried grapes remains. Viviani's note describes the wine as sweet and intense, balanced by freshness rather than left cloying.

What food pairs with Viviani Recioto?

Pandoro with mascarpone cream, sbrisolona almond tart, or a piquant Gorgonzola. It also works alone as a wine for after dinner.
