Valentina Cubi's certified organic Amarone from the Fumane hillsides shows a distinctly earthy, mineral character from organic viticulture; the Oseleta addition contributes pepper spice and the high acidity reflects the altitude of the Fumane Classico zone.

What it pairs with

  • Wild boar ragu with pappardelle
The wine's peppery Oseleta and iron minerality match the gamey intensity of wild boar pasta.
  • Aged Pecorino Romano
Salty sheep's milk cheese accentuates the wine's dried-fruit and cedar complexity.

History

Valentina Cubi, one of the few female winemakers in Valpolicella Classico, founded her estate in 1969 and converted to organic viticulture. Her Morar Amarone is made without chemical intervention from the Fumane hillside's old Corvina vines, producing a wine with an organic, earthy authenticity.

  1. 1969 — Valentina Cubi estate founded in Fumane
  2. 1995 — First Morar Amarone Classico release
  3. 2005 — Certified organic viticulture achieved
