Mofete Bianco is the Palmento Costanzo estate white: bright and mineral-driven from organically farmed Carricante on Etna's north slope in Contrada Santo Spirito.

What it pairs with

  • Grilled sea bass with olive oil and lemon
Clean mineral character and bright citrus notes are natural companions for delicate grilled fish.
  • Sicilian bruschetta with fresh tomato
Bright acidity and fennel notes complement the simplicity of fresh tomato bruschetta.
  • Insalata di mare (mixed seafood salad)
The wine's briny mineral and citrus freshness bridge the mixed seafood flavours.

History

Palmento Costanzo was founded in 2011 by Mimmo and Valeria Costanzo, with the Mofete range introduced from the 2012 vintage as the estate's primary expression. Mofete is the Sicilian term for volcanic fumaroles - a nod to the estate's position on the active volcano. The white draws on organically farmed Carricante and Catarratto from the Santo Spirito contrada.
