What it pairs with

  • Pasta con pomodoro and fresh basil
Classic Sicilian pairing: the wine's cherry freshness mirrors the tomato's sweetness.
  • Grilled pork involtini with capers and olives
The wine's herb complexity and medium body complement the Sicilian stuffed pork preparation.
  • Bruschetta with mortadella and pistachio
Fresh mineral acidity and cherry notes bridge the richness of the mortadella.

History

Mofete Rosso was introduced with the founding of Palmento Costanzo, drawing on Nerello Mascalese and Nerello Cappuccio from the organically farmed north-slope vineyards in Contrada Santo Spirito. The wine is the accessible introduction to the estate's Nerello Mascalese philosophy before the prestige Di Me cuvee.

  1. 2012 — First Mofete Rosso vintage alongside the estate launch
