What it pairs with

  • Hake cheeks
Lees texture from ten months in foudre gives enough weight for gelatinous fish.
  • Wild mushroom omelette
Bâtonnage-derived breadth stands beside earthy mushrooms.
  • Roast poussin
The wine carries white meat without a red wine's tannin.

History

The fruit comes from small Godello plots at Carracedo, Valtuille and Villafranca del Bierzo across clay-limestone, stony and slate soils. After pneumatic pressing and cool fermentation, the fine lees are selected for a ten-month élevage in a 4,000 litre oval foudre with weekly bâtonnage.
