Estaladiña is one of the Bierzo's rare surviving red varieties. Mengoba's plot sits at Cacabelos at 540 metres and is around twenty-five years old. Part of the crop is crushed without destemming, and both fermentation and a ten-month élevage take place in 400 litre clay tinajas.
