What it pairs with
-
Foie gras with brioche toast
Classic Aszú pairing: the sweet-acid tension counterbalances the richness of foie gras. -
Apricot clafoutis
Dried apricot in the wine amplifies the stone-fruit character of the dessert. -
Cashel Blue with walnuts
Blue cheese salt and walnut find an echo in the wine's hazelnut-caramel notes.
History
Holdvölgy first produced Aszú in the outstanding 2007 vintage, using their holdings in Mád's classified dűlők. The estate's old underground cellars provide ideal stable conditions for Aszú maturation.
