Holdvölgy first produced the higher-concentration 6-puttonyos Aszú from the outstanding 2011 vintage, using their holdings in Mád's classified dűlők and the near-2km underground cellar for long maturation.
Drink 10-35 from vintage. Young vintages benefit from 30-90 minutes of decanting; mature bottles should be handled carefully for sediment.
Foie gras with saffron brioche is the canonical pairing. Other strong matches include Roquefort with walnuts and grapes and Orange blossom crème brûlée. Saffron honey in the wine pairs elegantly with saffron-accented foie gras.
The blend is Furmint, Hárslevelű. The wine is classified as Tokaj PDO.
