Aroma: spice, small forest fruits

Palate: preserved freshness, layered complexity

A Valpolicella Superiore held ten years in 1000-litre oak vats before release, with clear spice and small undergrowth fruits on the nose and a palate that has kept remarkable freshness through the long ageing.

What it pairs with

  • Aged beef rib
A decade of oak needs a dish with the same weight of savour.
  • Truffle risotto
The long-aged spice register meets truffle directly.
  • Extra-aged Parmigiano
The wine's preserved acidity is the counterweight to crystalline salt.

History

Decennale is made only in vintages where the climate delivers great structure, acidity and tannin at once, and is then held for ten years in 1000-litre oak vats. It is the estate's argument that a Valpolicella Superiore, not only an Amarone, can carry a decade of ageing.
