Dry and clean Jerez Fino from Williams & Humbert's Don Zoilo range. Light with fresh almonds, mineral salinity and a clean dry finish.

What it pairs with

  • Jamón serrano
The classic Fino and ham pairing: almond notes amplify the nuttiness of cured ham.
  • Boquerones en vinagre
High acidity and saline minerality complement marinated anchovies.
  • Gambas al pil-pil
Light body and salinity pair well with garlic prawns in the Basque style.

History

Don Zoilo is the premium range of Williams & Humbert, established to offer a step up from the commercial Dry Sack medium. The Fino was introduced in the 1950s as a classic Jerez biological sherry intended for the Spanish domestic market and specialist exports, where dry Fino style was preferred over the sweet medium style popular in Britain.
