History

Paerno is the locality at Valgatara where the Vaona cellar stands. The grapes are selected at ripeness into small wooden crates for a traditional drying of several months, then given a cold maceration at one to two degrees to concentrate primary aromas before a spontaneous fermentation under partial anaerobiosis for about a month.
