What it pairs with

  • Fresh goat's cheese salad
Gooseberry and herb notes are a classic match for fresh goat's cheese.
  • Steamed asparagus
Herbal Sauvignon Blanc is a reliable partner for spring asparagus.
  • Sushi with wasabi
Crisp acidity and herbal freshness hold up to the delicate heat of wasabi.

History

Sauvignon Blanc is extremely rare in the Wachau DAC appellation, where the climate and tradition favour Grüner Veltliner and Riesling. Höllmüller planted Sauvignon Blanc as an experiment and found it thrived in the cooler Joching microclimate, producing a distinctively herbal and mineral style.

  1. 2005 — First commercial Sauvignon Blanc released by Höllmüller, one of the very few in the Wachau DAC zone
